Scale
Main Ingredients
- 3 cups fresh watermelon, cut into cubes, seeds removed
- 2 tablespoons lemon juice (natural)
- 1 to 2 tablespoons maple syrup (natural), adjust to taste
- 1 teaspoon natural gelling agent
Optional Add-Ins
- 2 tablespoons finely chopped fresh mint leaves
- 1/4 cup fresh blueberries or raspberries (for berry twist)
- 1/4 cup coconut water (to replace lemon juice for coconut splash)
- 1/4 cup plant-based yogurt (for extra creaminess)
- Pinch of chili powder (for spicy kick)
- Fresh basil or rosemary leaves (as herbal boost alternative to mint)
Instructions
- Prepare your watermelon: Cut fresh watermelon into cubes, removing any seeds, then transfer to a blender. This fresh fruit base delivers all the juicy notes your popsicles need.
- Blend ingredients together: Add lemon juice (natural), maple syrup (natural), and a small amount of your chosen natural gelling agent into the blender with the watermelon cubes. Blend until completely smooth and uniform.
- Add optional mix-ins: If desired, finely chop mint leaves or any other herbs or fruit additions and stir them into the blended mixture for added texture and flavor.
- Pour into molds: Carefully pour the watermelon mixture into popsicle molds. Leave a little space at the top to allow for expansion when freezing.
- Freeze until solid: Place the molds in the freezer for at least 4-6 hours, or overnight, until the popsicles are fully frozen and firm.
- Unmold and enjoy: Run warm water briefly around the outside of the molds to loosen the popsicles, then gently pull them free. Serve immediately for the best refreshment.
Notes
- Use perfectly ripe watermelon for the best natural flavor and color.
- Do not skip the natural gelling agent to ensure your popsicles hold their shape without becoming icy.
- Adjust sweetness with maple syrup (natural) based on the sweetness of your watermelon.
- Pre-chill the blended mixture before pouring into molds to improve freezing time and texture.
- For a colorful presentation, try layering different fruit mixtures by freezing each layer before adding the next.
