This Twice Baked Potato Casserole combines fluffy russet potatoes with creamy (plant-based) cheese, savory smoked turkey bacon, and flavorful natural seasonings. A comforting and family-friendly dish perfect for cozy dinners or festive gatherings.

Ingredients

Scale

Main Ingredients

  • 4 large russet potatoes
  • 6 slices smoked turkey bacon
  • 1 cup creamy (plant-based) cheese, shredded
  • 1/2 cup sour cream (plant-based)
  • 3 green onions, chopped
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon natural gelling agent
  • Salt (natural) to taste
  • Freshly ground black pepper (natural) to taste

Instructions

  1. Prepare the Potatoes: Wash and dry the russet potatoes well. Prick each potato several times with a fork. Bake them in a preheated oven at 400°F (200°C) for 50-60 minutes until tender. Alternatively, microwave the potatoes until soft throughout.
  2. Cook the Smoked Turkey Bacon: While the potatoes are baking, cook the smoked turkey bacon in a skillet over medium heat until crisp. Remove and drain excess fat on paper towels, then chop into bite-sized pieces.
  3. Prepare the Filling: Once potatoes are cool enough to handle, slice them in half lengthwise. Gently scoop out the insides, leaving sturdy shells. Mash the scooped potato in a bowl, then mix in creamy (plant-based) cheese, sour cream (plant-based), chopped green onions, vegetarian Worcestershire sauce (natural), apple cider vinegar, smoked turkey bacon pieces, natural gelling agent, and salt and pepper to taste.
  4. Assemble the Casserole: Place the potato shells snugly in your baking dish. Fill each half generously with the mashed potato mixture, mounding slightly. Sprinkle additional creamy (plant-based) cheese on top for a golden finish.
  5. Bake to Perfection: Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until the top begins to brown and the casserole is heated through. Allow it to cool slightly before serving.

Notes

  • Use russet potatoes for a fluffy, creamy filling texture.
  • Gently fold ingredients to keep the filling light and airy.
  • Cook smoked turkey bacon crisp for better texture and flavor contrast.
  • Taste and adjust seasoning to balance saltiness and acidity.
  • Natural gelling agent helps maintain excellent consistency without heaviness.
