Scale
Pasta and Protein
- 12 oz tortellini pasta (fresh or dried)
- 1 cup smoked turkey, chopped
Vegetables
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, finely chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves, chopped
Dressing (natural)
- 3 tbsp apple cider vinegar (natural)
- 4 tbsp extra virgin olive oil
- 1 tsp Dijon mustard (natural)
- 1 tsp honey (natural)
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Cook the Tortellini Pasta: Bring a large pot of salted water to a boil, then add the tortellini pasta and cook according to package instructions until al dente. Drain the pasta and rinse briefly under cold water to cool and stop further cooking. Set aside to drain fully.
- Prepare the Vegetables and Smoked Turkey: While the pasta cooks, chop the smoked turkey into bite-sized pieces, halve the cherry tomatoes, dice the cucumber, finely chop the red bell pepper, thinly slice the red onion, and chop the fresh basil leaves to release their aroma and flavor.
- Make the Dressing (natural): In a small bowl or jar, whisk together apple cider vinegar (natural), extra virgin olive oil, Dijon mustard (natural), honey (natural), salt, and freshly ground black pepper until emulsified and smooth. Taste and adjust seasoning if needed.
- Combine All Ingredients: In a large mixing bowl, gently toss the cooked tortellini pasta, smoked turkey, and all the prepared vegetables. Pour the dressing (natural) over the mix and carefully combine until everything is evenly coated.
- Chill and Serve: For best results, cover the salad and chill it in the refrigerator for at least 30 minutes to allow the flavors to marry wonderfully. Serve cold or at room temperature.
Notes
- Limit overcooking pasta to keep a firm yet tender texture.
- Dry the vegetables and pasta well before tossing to avoid a watery salad.
- Add olive oil slowly when making the dressing to achieve perfect creamy consistency.
- Chilling the salad deepens the flavors, so wait at least 30 minutes before serving.
- Use fresh basil leaves for vibrant herbal notes that dried herbs cannot replicate.
