Instructions

  2. First Rise: Cover the bowl with a clean kitchen towel or plastic wrap. Let the dough rise at room temperature for 8 to 12 hours until doubled in size, allowing slow fermentation to develop flavor without kneading.
  3. Forming the Rolls: Generously flour your work surface and gently scoop out the dough. Divide into equal portions using a bench scraper or knife. Shape each piece into a smooth ball by folding the edges underneath and tucking them at the bottom.
  4. Second Rise: Place the shaped rolls on a parchment-lined baking sheet, spaced slightly apart. Cover and let rise for 1 to 2 hours until puffy and nearly doubled in size.
