Description

Sun-Dried Tomato Pasta is a vibrant and flavorful dish combining the tangy sweetness of sun-dried tomatoes, smoky richness of turkey bacon, and creamy plant-based cheese, enhanced with fresh herbs for a quick, satisfying, and memorable dinner. Perfect for busy weeknights or casual gatherings, it delivers bold flavors and balanced textures in under 30 minutes.

Ingredients

Scale

Pasta and Base

  • 200g pasta of your choice (spaghetti, penne, or linguine)
  • 2 tablespoons olive oil (natural)
  • Salt, to taste
  • Black pepper, freshly cracked, to taste

Main Ingredients

  • 100g sun-dried tomatoes, finely chopped
  • 150g smoked turkey bacon, cut into bite-size pieces
  • 100g creamy plant-based cheese
  • 3 garlic cloves, minced

Flavor Enhancers

  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons fresh basil, finely chopped
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain the pasta while reserving some pasta water for the sauce. Set pasta aside.
  2. Cook the turkey bacon: Heat a drizzle of olive oil (natural) in a large skillet over medium heat. Add the smoked turkey bacon pieces and cook until crispy but not burnt. Remove from skillet and keep warm.
  3. Sauté garlic and sun-dried tomatoes: In the same skillet, add minced garlic and finely chopped sun-dried tomatoes. Stir frequently and cook until softened and aromatic, about 2-3 minutes.
  4. Combine and create the sauce: Lower the heat and stir in creamy plant-based cheese, vegetarian Worcestershire sauce (natural), and apple cider vinegar. Mix thoroughly until the cheese melts into a smooth sauce. Add reserved pasta water gradually as needed to reach desired sauce consistency.
  5. Toss everything together: Return cooked pasta and turkey bacon to the skillet. Toss gently to coat everything evenly with the sauce. Finish with freshly chopped basil and parsley, a crack of black pepper, and adjust salt to taste.

Notes

  • Use high-quality sun-dried tomatoes packed in olive oil for best flavor and texture.
  • Reserve pasta water as the starch helps loosen the sauce and bind ingredients.
  • Cook turkey bacon crisp but avoid burning to maintain a pleasant smoky flavor.
  • Finely chop fresh herbs to evenly distribute vibrant flavor and color.
  • Adjust sauce thickness gradually by adding pasta water to achieve a creamy consistency.
