Description

A quick and flavorful one-pot meal featuring tender shrimp cooked in a rich garlic butter (plant-based) sauce with perfectly al dente pasta. Easy to prepare with minimal cleanup, this dish balances comforting textures with vibrant, fresh flavors, making it ideal for busy weeknights or relaxed weekends.

Ingredients

Scale

Shrimp and Pasta

  • 12 oz peeled, deveined shrimp
  • 8 oz spaghetti or linguine pasta

Sauce and Flavorings

  • 4 tablespoons plant-based butter
  • 4 cloves garlic, minced
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 4 cups vegetable broth
  • 2 tablespoons freshly squeezed lemon juice (natural)
  • Red pepper flakes, optional, to taste

Garnishes and Add-Ins

  • 2 tablespoons fresh parsley, chopped
  • Optional: baby spinach or cherry tomatoes for vegetable boost
  • Optional: shredded plant-based Parmesan (plant-based) for garnish

Instructions

  1. Sauté the Garlic and Shrimp: Melt 2 tablespoons of plant-based butter in a large pot over medium heat. Add freshly minced garlic and cook until fragrant but not browned. Add the shrimp and cook until they turn pink and opaque, about 2 minutes per side. Remove shrimp from pot and set aside.
  2. Build the Sauce: In the same pot, add the remaining 2 tablespoons of plant-based butter and stir in the vegetarian Worcestershire sauce (natural). Pour in the vegetable broth and freshly squeezed lemon juice (natural). Bring the mixture to a gentle simmer.
  3. Cook the Pasta: Add the dry spaghetti or linguine pasta directly into the simmering broth and sauce. Stir frequently to prevent sticking. Cook until pasta is al dente and the liquid has reduced, about 10 minutes.
  4. Combine Shrimp and Finish: Return the cooked shrimp to the pot and toss with pasta. Season with salt, pepper, and red pepper flakes if using. Let everything heat together for another minute to meld the flavors.
  5. Garnish and Serve: Sprinkle freshly chopped parsley over the pasta. Serve immediately while warm and comforting.

Notes

  • Use fresh garlic and shrimp to maximize flavor.
  • Avoid overcooking shrimp to keep them tender.
  • Stir often during pasta cooking to prevent sticking.
  • Add extra vegetable broth if pasta absorbs too quickly.
  • Finish with fresh herbs to brighten the dish.
