Ingredients

Scale

Mushroom Rice Ingredients

  • 250g fresh button or cremini mushrooms, sliced
  • 1 cup long-grain rice, rinsed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 cups vegetable stock
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt, or to taste
  • ½ tsp black pepper, or to taste
  • 1 tbsp apple cider vinegar (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)

Instructions

  1. Prepare the Ingredients: Clean and slice the mushrooms. Finely chop the onion and garlic. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Sauté the Aromatics and Mushrooms: Heat olive oil in a large pan over medium heat. Add the chopped onions and garlic, cooking until softened and fragrant. Add the sliced mushrooms and sauté for 6 to 8 minutes until they release moisture and turn golden brown.
  3. Add Rice and Liquids: Stir in the rinsed rice, coating it well with the mushroom mixture. Pour in vegetable stock, apple cider vinegar (natural), and vegetarian Worcestershire sauce (natural). Season with salt and pepper, then bring to a gentle boil.
  4. Simmer Until Tender: Lower the heat to a simmer, cover the pan, and cook for 15 to 20 minutes or until the rice is tender and the liquid is fully absorbed. Avoid uncovering frequently to maintain steam for perfectly cooked rice.
  5. Finish and Garnish: Fluff the cooked mushroom rice gently with a fork. Stir in chopped fresh parsley for freshness. Taste and adjust seasoning if needed. Serve warm.

Notes

  • Use fresh, firm mushrooms for best texture and flavor.
  • Rinse rice thoroughly to prevent clumping and ensure fluffy grains.
  • Simmer covered on low heat to retain moisture and cook evenly.
  • Fluff rice gently to keep grains intact and avoid mushiness.
  • Adjust liquid quantity based on rice type to ensure proper cooking.
