Description

Enjoy a flavorful and comforting Mexican Chicken with Cheese Sauce featuring tender chicken breasts cooked with vibrant Mexican spices and topped with a creamy plant-based cheese sauce. This easy-to-make dish uses simple, natural ingredients and offers rich, smooth textures and bright flavors perfect for weeknight meals or entertaining guests.

Ingredients

Scale

Chicken and Seasoning

  • 4 skinless chicken breasts
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil

Sauce Base

  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 cup diced tomatoes (fresh or canned)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp grape juice

Cheese Sauce and Garnish

  • 1 cup plant-based cheese sauce
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • Salt and pepper, to taste

Instructions

  1. Prepare the Chicken: Season chicken breasts evenly with salt, pepper, chili powder, and cumin. Heat olive oil in a skillet over medium heat. Cook the chicken breasts for about 5-7 minutes on each side or until golden and fully cooked through. Remove from heat and set aside to rest.
  2. Build the Sauce Base: Using the same skillet, add a little more olive oil if necessary. Sauté chopped onions and minced garlic until they become translucent and aromatic. Stir in the diced tomatoes and allow them to cook down slightly, forming a flavorful base.
  3. Season and Simmer: Add chili powder, cumin, vegetarian Worcestershire sauce (natural), and grape juice to the tomato mixture. Let the sauce simmer gently for about 5 minutes, allowing the spices to blend and the flavors to deepen.
  4. Add the Cheese Sauce: Pour the creamy plant-based cheese sauce into the skillet and stir thoroughly to combine. Warm the sauce gently, allowing it to thicken slightly with the help of a natural gelling agent, perfectly coating the tomato base.
  5. Combine and Finish: Return the cooked chicken breasts to the skillet, spooning the luscious cheese sauce over each piece. Cover briefly and let the flavors meld for a couple of minutes. Remove from heat, garnish with fresh cilantro and a squeeze of lime juice for brightness before serving.

Notes

  • Pound chicken breasts to even thickness for consistent cooking and juiciness.
  • Use fresh garlic and onion to enhance the aroma and flavor.
  • Adjust chili powder quantity to your preferred spice level while maintaining authentic taste.
  • Warm the cheese sauce slowly to prevent separation or grainy texture.
  • Allow cooked chicken to rest before slicing to keep it moist.
