Ingredients

Scale

Meatloaf Base

  • 1 lb lean ground beef
  • 1 lb ground lamb
  • 1 medium onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 cup breadcrumbs
  • 1/2 cup plant-based milk
  • 2 eggs (or 2 flax eggs as binder)
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper

Sweet Brown Sugar Glaze

  • 1/2 cup brown sugar
  • 2 tbsp tomato paste (natural)
  • 2 tbsp grape juice

Optional Variations

  • 1/2 cup grated carrots (for veggie boost)
  • 1/2 cup grated zucchini or finely chopped mushrooms
  • 12 chopped jalapeños or 1 tsp hot paprika (for spicy kick)
  • 1/2 cup shredded plant-based cheese
  • Gluten-free breadcrumbs or ground oats in place of regular breadcrumbs
  • Fresh rosemary or parsley in place of thyme

Instructions

  1. Prepare Your Ingredients: Finely chop the onion and garlic. Soak the breadcrumbs in plant-based milk until soft. Preheat the oven to 350°F (175°C) to prepare for baking.
  2. Mix the Meatloaf Base: In a large bowl, combine the lean ground beef, ground lamb, soaked breadcrumbs, eggs or flax eggs, vegetarian Worcestershire sauce (natural), chopped onion, garlic, smoked paprika, thyme, salt, pepper, and cayenne. Mix gently with your hands or a sturdy spoon until ingredients are well incorporated; avoid overmixing to keep the meatloaf tender.
  3. Shape and Glaze the Meatloaf: Transfer the mixture to a baking sheet or loaf pan, shaping it into a loaf. In a small bowl, stir together brown sugar, tomato paste (natural), and grape juice to create the glaze. Spread the glaze generously over the top of the meatloaf.
  4. Bake Until Perfect: Place the meatloaf in the preheated oven and bake for 50 to 60 minutes, or until the internal temperature reaches 160°F (70°C) and the glaze is bubbly and caramelized.
  5. Rest and Serve: Remove the meatloaf from the oven and let it rest for 10 to 15 minutes to allow juices to redistribute, ensuring moist and flavorful slices.

Notes

  • Use a meat thermometer to ensure perfect doneness without drying out the meatloaf.
  • Do not overmix the meat mixture to keep the texture tender.
  • Allow the meatloaf to rest after baking for better slicing and flavor.
  • Taste and adjust glaze sweetness by varying brown sugar and grape juice.
  • Line your pan with parchment paper or a silicone mat for easy cleanup.
