Ingredients
Scale
Pasta & Protein
- 300g tortellini pasta (filled with plant-based cheese)
- 100g smoked turkey bacon
Vegetables & Herbs
- 150g cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- 2 tbsp fresh basil, roughly chopped
- 2 tbsp fresh parsley, roughly chopped
Dressing
- 3 tbsp apple cider vinegar (natural)
- 4 tbsp olive oil (natural)
- 1 tbsp vegetarian Worcestershire sauce (natural)
- 1/2 tsp garlic powder (natural)
- Salt, to taste
- Black pepper, to taste
- 1/4 tsp natural gelling agent
Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil and cook the tortellini according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool them down for the salad.
- Prepare the Bacon and Vegetables: While the pasta cooks, crisp the smoked turkey bacon in a pan over medium heat until golden and slightly crisp. Set aside on paper towels to drain excess fat. Then, chop cherry tomatoes, cucumber, and finely slice the red onion. Roughly chop fresh basil and parsley to release their wonderful aroma.
- Make the Zesty Dressing: In a small bowl, whisk together apple cider vinegar (natural), olive oil (natural), vegetarian Worcestershire sauce (natural), garlic powder (natural), salt, and black pepper. Stir in a small amount of natural gelling agent until the mixture lightly thickens for better coating.
- Toss Everything Together: In a large mixing bowl, combine the cooled tortellini, smoked turkey bacon, chopped vegetables, and herbs. Pour the dressing over and toss gently but thoroughly to ensure every piece is evenly coated and the flavors meld beautifully.
- Chill and Serve: Cover the salad and refrigerate for at least 30 minutes before serving. This chilling step allows the flavors to develop and the salad to refresh perfectly before you enjoy it.
