Easy to prepare with pantry staples and fresh produce, it’s ideal for busy weeknights or relaxed dinners, offering a balanced, nutritious, and satisfying one-pan dish everyone will enjoy.

Ingredients

Scale

Chicken and Sweet Potatoes

  • 4 boneless skinless chicken thighs
  • 2 large sweet potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste

Honey Garlic Sauce

  • 3 tablespoons natural honey
  • 4 fresh garlic cloves, minced
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon natural gelling agent (optional)

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Sweet Potatoes: Peel and cut the sweet potatoes into evenly sized cubes for uniform roasting. Toss them with olive oil, smoked paprika, salt, and black pepper. Spread the sweet potatoes out on a baking sheet or roasting pan. Roast at 400°F (200°C) for about 10 minutes.
  2. Make the Honey Garlic Sauce: While the sweet potatoes roast, whisk together the natural honey, minced fresh garlic, vegetarian Worcestershire sauce (natural), apple cider vinegar, and olive oil in a bowl. Add the natural gelling agent if using to help thicken the glaze during roasting.
  3. Season and Add the Chicken: Pat the chicken thighs dry and season them generously with salt, black pepper, and a little smoked paprika. Remove the sweet potatoes from the oven, stir them, then nestle the chicken thighs into the pan among the sweet potatoes. Pour the honey garlic sauce evenly over the chicken and sweet potatoes to coat.
  4. Roast Until Done: Return the pan to the oven and roast for another 25 to 30 minutes, or until the chicken is cooked through with an internal temperature of 165°F (74°C) and sweet potatoes are tender. The sauce will thicken and caramelize to create a delicious glaze.
  5. Garnish and Serve: Sprinkle the chopped fresh parsley over the top before serving to add brightness and color. Serve the Honey Garlic Chicken and Sweet Potatoes directly from the pan or plated for a family-style meal.

Notes

  • Dry the chicken well before seasoning to achieve crispy, golden texture.
  • Cut sweet potatoes evenly to ensure uniform roasting and avoid undercooked or mushy pieces.
  • Allow the chicken to rest a few minutes after roasting to maintain juiciness.
  • Use freshly minced garlic for a stronger, brighter flavor than pre-minced versions.
  • Taste the sauce before adding to the pan and adjust honey amounts for preferred sweetness.
