Description

Honey Garlic Butter Roasted Carrots are tender, caramelized carrots glazed in a sweet and savory honey garlic butter sauce made with plant-based butter, vegetarian Worcestershire sauce (natural), and a splash of apple cider vinegar. This easy to prepare side dish is perfect for busy days or entertaining and pairs beautifully with a variety of main courses.

Ingredients

Scale

Vegetables

  • 1 lb fresh medium-sized carrots, peeled and cut into evenly sized sticks or chunks

Sauce & Seasonings

  • 3 tbsp butter (plant-based)
  • 2 tbsp honey (natural)
  • 2 cloves garlic, freshly minced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp apple cider vinegar
  • 1/2 tsp sea salt, or to taste
  • 1/4 tsp black pepper, or to taste

Garnish

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Carrots: Peel the carrots and cut them into evenly sized sticks or chunks to ensure consistent cooking. Place them in a large bowl ready for seasoning.
  2. Make the Honey Garlic Butter Sauce: In a small saucepan over low heat, melt the plant-based butter. Add freshly minced garlic, honey (natural), vegetarian Worcestershire sauce (natural), and a splash of apple cider vinegar. Stir gently until everything is combined and fragrant.
  3. Toss and Coat: Pour the warm honey garlic butter mixture over the carrots. Season with sea salt and black pepper to your preference. Toss everything well so each piece gets an even coating of the glossy glaze.
  4. Roast to Perfection: Arrange the carrots in a single layer on a baking sheet lined with parchment paper or a silicone mat. Roast in a preheated oven at 400°F (200°C) for 25-30 minutes, turning halfway through, until the carrots are tender and caramelized.
  5. Garnish and Serve: Once out of the oven, sprinkle freshly chopped parsley on top for a pop of color and freshness. Serve immediately for the best taste and texture.

Notes

  • Cut carrots evenly to ensure even cooking and avoid burning.
  • Preheat the oven fully for optimal caramelization.
  • Do not overcrowd the baking sheet to allow roasting instead of steaming.
  • Use freshly minced garlic for the best aroma and flavor.
  • Taste the glaze before roasting and adjust honey (natural) for sweetness as desired.
  • Leftovers can be refrigerated in an airtight container for up to 3 days.
  • For freezing, freeze spread out on a baking sheet until firm, then transfer to a freezer-safe bag; keep frozen up to 2 months.
  • Reheat gently in a preheated oven at 350°F (175°C) for 10 minutes to maintain texture.
