Description

Greek Chicken with Lemon and Feta (plant-based) offers a vibrant and fresh Mediterranean meal featuring tender chicken thighs marinated in lemon, garlic, and herbs, topped with creamy plant-based feta (plant-based) and baked to perfection. This easy and quick recipe is perfect for a healthy weeknight dinner or special occasion, delivering a bright, savory, and satisfying flavor profile.

Ingredients

Scale

Chicken and Marinade

  • 46 chicken thighs (bone-in or boneless)
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 3 garlic cloves, minced
  • 3 tbsp olive oil
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Topping and Garnish

  • 1/2 cup plant-based feta (plant-based) chunks
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the marinade: In a bowl, whisk together fresh lemon juice, lemon zest, minced garlic, olive oil, vegetarian Worcestershire sauce (natural), dried oregano, sea salt, and black pepper until well combined to create a vibrant marinade.
  2. Marinate the chicken: Place chicken thighs in a large dish or ziplock bag and pour the marinade over them. Toss to coat thoroughly. Let marinate for at least 20 minutes at room temperature to absorb all the flavors.
  3. Sear the chicken: Heat olive oil in a heavy skillet over medium heat. Remove chicken from marinade (reserve marinade) and sear each piece skin-side down until golden brown, about 5-6 minutes.
  4. Bake with toppings: Transfer the seared chicken to a baking dish. Pour the reserved marinade evenly over the chicken and scatter plant-based feta (plant-based) chunks across the pieces. Bake in a preheated oven at 375°F (190°C) for 25 minutes or until chicken is cooked through and tender.
  5. Garnish and serve: Remove from oven and sprinkle freshly chopped parsley over the chicken. Serve warm with your choice of side dishes and enjoy the fresh lemon and savory feta flavors.

Notes

  • Use room temperature chicken for even marinating and cooking.
  • Do not skip the lemon zest: it adds intense citrus flavor beyond the juice.
  • Reserve marinade for baking to keep the chicken moist and flavorful.
  • Let cooked chicken rest before serving to allow juices to redistribute.
  • Choose plant-based feta (plant-based) made with natural gelling agent for the best creamy texture that holds shape.
