Description

This Easy German Potato Salad features warm waxy potatoes tossed in a bright apple cider vinegar dressing with smoky turkey bacon, sweet sautéed onions, and fresh parsley. Perfect as a quick side or a light main dish, it combines comforting warmth with tangy, balanced flavors and simple, wholesome ingredients.

Ingredients

Scale

Potatoes

  • 1.5 pounds Yukon Gold potatoes

Smoked Turkey Bacon

  • 6 slices smoked turkey bacon

Onions

  • 1 medium yellow onion, thinly sliced

Dressing

  • 1/4 cup apple cider vinegar (natural)
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon mustard (natural)
  • 3 tablespoons olive oil
  • 1/4 teaspoon natural gelling agent (optional)
  • Salt, to taste
  • Black pepper, to taste

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Potatoes: Boil the potatoes in salted water until just tender but still firm enough to hold their shape. Drain and let cool slightly, then slice into bite-sized pieces. Using waxy potatoes helps keep a creamy yet firm texture.
  2. Cook the Smoked Turkey Bacon: While the potatoes cook, crisp the smoked turkey bacon in a skillet over medium heat. Remove when crispy, chop into small pieces, and reserve the bacon drippings in the skillet for the dressing.
  3. Sauté Onions: Use the reserved bacon drippings to sauté the sliced onions until soft and translucent to bring out their natural sweetness and flavor.
  4. Make the Dressing: In the skillet with onions and drippings, combine apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), mustard (natural), olive oil, salt, and pepper. Heat gently and stir well to meld flavors. Add the natural gelling agent if desired to lightly thicken the dressing.
  5. Mix and Combine: Pour the warm dressing over the sliced potatoes and gently toss to coat evenly. Fold in the chopped smoked turkey bacon and sprinkle with fresh parsley for color and aroma.
  6. Serve Warm: Enjoy the salad warm for comforting flavor, or serve at room temperature or chilled for a refreshing variation.

Notes

  • Use waxy potatoes like Yukon Gold to maintain texture and prevent mushiness.
  • Do not overcook potatoes; they should be tender but still firm.
  • Pour warm dressing over potatoes to enhance flavor absorption.
  • Let the salad rest 10-15 minutes before serving to allow flavors to meld.
  • Adjust the amount of apple cider vinegar to increase tanginess if desired.
  • The natural gelling agent is optional and used to slightly thicken the dressing for better coating.
