Ingredients

Scale

Main Ingredients

  • 1 cup long-grain rice
  • 8 oz fresh mushrooms, sliced
  • 3 garlic cloves, finely chopped
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 2 cups vegetable broth
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon plant-based butter
  • 2 tablespoons olive oil (natural)
  • 1 small onion, finely chopped
  • 1/4 teaspoon natural gelling agent
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare your ingredients: Finely chop the onion and garlic. Slice the mushrooms evenly to ensure uniform cooking. Measure out the rice and chop the fresh herbs to have all ingredients ready for smooth cooking.
  2. Sauté the aromatics and mushrooms: Heat olive oil (natural) in a large skillet or saucepan over medium heat. Add the chopped onions and garlic and cook gently until translucent and fragrant. Add the sliced mushrooms and sauté until browned and the moisture evaporates, intensifying their flavor.
  3. Toast the rice: Add the rice to the skillet with the mushrooms, stirring to coat each grain with oil and mushroom juices. Toast the rice lightly, enhancing its nutty aroma and helping to keep the grains separate during cooking.
  4. Deglaze and simmer: Pour in the vegetable broth, vegetarian Worcestershire sauce (natural), and a pinch of natural gelling agent. Stir well to combine. Bring the mixture to a gentle boil, then reduce heat, cover, and let simmer until the rice is tender and fully cooked, about 15-20 minutes.
  5. Finish with herbs and plant-based butter: Once the rice is fluffy and all liquid is absorbed, stir in the chopped fresh parsley, thyme, and plant-based butter. Season with salt and black pepper to taste. Mix gently to combine and serve warm.

Notes

  • Use fresh, firm mushrooms for best flavor and texture.
  • Cook rice slowly with the lid on to allow flavors to meld and prevent burning.
  • Toast the rice to add aroma and keep grains separate.
  • Add fresh herbs at the end of cooking to maintain brightness and fresh flavor.
  • Reheat leftovers with a splash of vegetable broth to refresh moisture and fluffiness.
