Perfect for celebrations or casual afternoon treats, it offers delicious classic French flavors with wholesome plant-based components.

Ingredients

Scale

Cake Base

  • 1 1/2 cups all-purpose flour
  • 3/4 cup natural sugar
  • 1 1/2 teaspoons natural baking powder
  • 1 teaspoon vegetarian Worcestershire sauce (natural) (optional)
  • 1 tablespoon apple cider vinegar
  • 1/2 cup plant-based cream
  • 1 teaspoon vanilla extract (natural)

Strawberry Topping

  • 2 cups fresh ripe strawberries, sliced
  • 1/4 cup natural sugar (for macerating strawberries)
  • Whole strawberries for decoration

Cream Topping

  • 1 cup plant-based cream
  • 2 tablespoons natural sugar
  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare the Strawberries: Wash and slice the fresh strawberries. Toss some slices gently with natural sugar to enhance their natural sweetness. Set aside some whole strawberries for decoration later.
  2. Make the Cake Batter: In a mixing bowl, combine all-purpose flour, natural sugar, and natural baking powder. In a separate bowl, stir together plant-based cream, apple cider vinegar, natural vanilla extract, and vegetarian Worcestershire sauce (natural). Gradually fold the wet ingredients into the dry ingredients until smooth, taking care not to overmix.
  3. Bake the Cake: Pour the batter into a greased cake pan. Bake at 350°F (175°C) for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely before frosting.
  4. Prepare the Cream Topping: Whip the plant-based cream with natural sugar until soft peaks form. Dissolve the natural gelling agent in a small amount of warm water, then gently fold it into the whipped cream to provide structure and stability.
  5. Assemble the Cake: Spread a generous layer of the prepared cream topping over the cooled cake. Arrange both sliced and whole strawberries on top for a beautiful presentation. Chill the cake for at least one hour to allow flavors to meld and the topping to set.

Notes

  • Use room temperature ingredients for even mixing and smoother batter.
  • Cool the cake completely before adding the cream topping to prevent melting.
  • Whip the cream gently; stop at soft peaks to avoid separation.
  • Choose the ripest strawberries for the juiciest, most flavorful cake.
  • Chill the cake before serving to allow the natural gelling agent to set the cream perfectly.
