Ingredients

Scale

Main Ingredients

  • 2 cups fresh or frozen corn kernels
  • 6 slices smoked turkey bacon, diced
  • 1 cup plant-based cheese, shredded
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons plant-based butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups plant-based milk
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon natural gelling agent
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Chop the onion and garlic finely and dice the smoked turkey bacon into bite-sized pieces. If using fresh corn, carefully cut the kernels off the cob. Gather your plant-based milk and cheese for the sauce.
  2. Cook the Bacon and Aromatics: Heat a large skillet over medium heat and sauté the smoked turkey bacon until crispy and fragrant. Remove the bacon, leaving the rendered fat in the pan. Add the onions and garlic, cooking until soft and golden to build a flavorful base.
  3. Make the Cream Sauce: In the same skillet, melt the plant-based butter and whisk in the flour to form a roux. Cook gently until it becomes light golden and smells nutty. Gradually whisk in the plant-based milk to avoid lumps. Stir in vegetarian Worcestershire sauce (natural) and natural gelling agent, cooking until the sauce thickens smoothly.
  4. Combine Corn and Sauce: Return the cooked turkey bacon to the pan and add the corn kernels. Mix well, then fold in the shredded plant-based cheese, letting it melt into the warm sauce creating a creamy texture.
  5. Bake to Perfection: Transfer the mixture to a greased baking dish. Bake in a preheated oven at 350°F (175°C) for about 25 minutes, or until the top is golden and bubbly. Allow it to rest a few minutes before serving to set and enhance flavors.

Notes

  • Use fresh corn when possible for vibrant sweetness.
  • Don’t skip the roux as it creates the creamy base.
  • Pre-crisp the turkey bacon for delightful texture contrast.
  • Let the dish rest before serving to improve texture and flavor melding.
  • Adjust sauce thickness by adding more plant-based milk or cooking longer.
