Description

Easter Herb-Roasted Lemon Chicken is a vibrant and juicy roast chicken infused with zesty lemon and a medley of fresh aromatic herbs. This elegant yet simple dish features tender meat with crisp, golden skin, perfect for festive family dinners. Slow roasting locks in moisture, creating a flavorful centerpiece bursting with fresh spring flavors.

Ingredients

Scale

Chicken and Citrus

  • 1 whole fresh chicken (about 45 lbs)
  • 1 lemon, sliced

Herb Mixture

  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Chicken: Start by rinsing the whole chicken under cold water, then pat it dry with paper towels. This step ensures the skin will roast crisp and golden.
  2. Season the Chicken: In a small bowl, mix together olive oil, minced garlic, chopped fresh herbs (rosemary, thyme, parsley), vegetarian Worcestershire sauce (natural), salt, and pepper. Rub this herb mixture generously all over the chicken, making sure to coat inside the cavity as well.
  3. Add Lemon: Slice one lemon and place the slices inside the chicken cavity along with a few sprigs of fresh herbs. This helps infuse the chicken from the inside with bright citrus flavor.
  4. Roast the Chicken: Place the prepared chicken breast side up on a rack in a roasting pan. Roast at 375°F (190°C) for about 1 hour and 20 minutes or until the internal temperature reaches 165°F (74°C). Baste the chicken occasionally with the pan juices to keep it moist.
  5. Rest and Serve: Once out of the oven, let the chicken rest for 10-15 minutes before carving. This allows the juices to redistribute, guaranteeing juicy, tender meat.

Notes

  • Use room temperature chicken before roasting for even cooking.
  • Pat skin very dry before applying oil and seasonings to achieve the crispiest crust.
  • Baste regularly with pan juices during roasting to keep chicken moist.
  • Use a meat thermometer to ensure the chicken reaches 165°F (74°C).
  • Allow resting time after roasting to lock in moisture.
