Instructions

  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining. Drain pasta and set aside.
  3. Make the Creamy Sauce: Lower heat to medium-low. In the same pan used for asparagus, add plant-based cheese, lemon juice, vegetarian Worcestershire sauce (natural), and natural gelling agent. Stir continuously while gradually incorporating reserved pasta water until a smooth, silky sauce forms.
  4. Combine Pasta and Sauce: Add cooked pasta and sautéed asparagus to the sauce. Toss gently to coat all pasta evenly. Season with salt, pepper, and additional lemon juice as desired to balance flavors.
  5. Finish with Fresh Herbs: Remove from heat and sprinkle chopped basil or parsley on top. Garnish with lemon zest curls if desired. Serve immediately while warm.
