Instructions

  1. Prepare the Chicken and Bacon: Cook the smoked turkey bacon in a skillet over medium heat until crisp. Remove from the skillet and set aside. In the same pan, season the chicken breasts with salt and pepper, then cook until golden brown and cooked through, about 6-7 minutes per side. Slice the chicken into bite-sized pieces once cooled slightly.
  2. Sauté the Aromatics and Spinach: In the same skillet, heat olive oil over medium heat. Add finely chopped onion and minced garlic and sauté until the onion becomes translucent and fragrant, about 3-4 minutes. Add fresh spinach and cook until wilted, stirring frequently to combine all the flavors.
  3. Make the Creamy Sauce: In a small saucepan, combine plant-based cream, apple cider vinegar (natural), vegetarian Worcestershire sauce (natural), dried thyme, paprika, salt, and black pepper. Heat gently over low-medium heat while whisking in the natural gelling agent until the sauce thickens and reaches a velvety consistency, about 5 minutes. Remove from heat.
  4. Combine All Ingredients: In a large mixing bowl, combine the cooked chicken pieces, wilted spinach and onion mixture, and crispy smoked turkey bacon pieces. Pour the creamy sauce over the mixture and stir well. Then fold in the shredded plant-based cheese for richness and gooey texture.
  5. Bake to Perfection: Transfer the entire mixture into a greased casserole dish. Bake in a preheated oven at 375°F (190°C) for approximately 25 minutes, or until the top is golden brown and bubbly. Remove from oven and allow to rest for a few minutes before serving.
