Ingredients

Scale

Main Ingredients

  • 4 cups fresh broccoli florets
  • 6 slices smoked turkey bacon, sliced
  • 1 cup plant-based cheese, shredded (plant-based)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour (or gluten-free flour blend)
  • 2 cups plant-based milk
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon apple cider vinegar (natural)
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste

Topping

  • 1 cup panko bread crumbs (use gluten-free if desired)
  • 2 tablespoons olive oil
  • Fresh parsley or chives, chopped (optional for garnish)

Other

  • 1/2 teaspoon natural gelling agent

Instructions

  1. Prepare the Broccoli: Blanch fresh broccoli florets in boiling water for 2 to 3 minutes until bright green and just tender. Immediately transfer them to ice water to stop the cooking and preserve color and crunch. Drain well.
  2. Cook the Smoked Turkey Bacon: In a skillet over medium heat, cook sliced smoked turkey bacon until crispy. Drain on paper towels and set aside.
  3. Make the Creamy Sauce: Sauté finely chopped onion and minced garlic in a splash of olive oil over medium heat until soft and fragrant. Stir in flour and cook lightly to absorb the oil. Whisk in plant-based milk gradually to create a smooth, thick sauce. Add vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), salt, pepper, and nutmeg. Stir until combined. Blend in shredded plant-based cheese until melted and creamy. Finally, incorporate natural gelling agent to achieve the perfect silky consistency.
  4. Combine and Assemble: Fold the blanched broccoli and cooked turkey bacon into the creamy sauce gently. Pour the mixture into a greased baking dish and spread evenly. Toss panko bread crumbs with olive oil and sprinkle evenly on top.
  5. Bake to Perfection: Bake the casserole in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the topping is crisp, golden, and the sauce is bubbly around the edges. Let it cool slightly before serving to allow the sauce to set.

Notes

  • Do not overcook the broccoli to maintain vibrant color and crunch.
  • Use high-quality creamy plant-based cheese for best sauce texture and flavor.
  • Brush or toss the topping crumbs with olive oil to promote even browning and crispiness.
  • Stir sauce constantly when cooking to prevent lumps and ensure smooth texture.
  • Let the casserole rest after baking to allow cleaner slices and less mess.
