Ingredients

Scale

Main Ingredients

  • 2 cups fresh spinach, washed and roughly chopped
  • 1 cup plant-based cottage cheese
  • 3 large eggs
  • 1/2 cup plant-based cheese, shredded
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced (natural flavoring)
  • 1/4 tsp nutmeg (natural flavoring)
  • 1 tsp vegetarian Worcestershire sauce
  • Salt and pepper, to taste
  • 1 tbsp olive oil (natural), for sautéing and greasing

Optional Variations

  • 1/2 cup mushrooms, sautéed
  • Fresh herbs such as parsley, dill, or basil, chopped
  • Pinch of chili flakes or 1 finely chopped jalapeño
  • Different greens such as kale, Swiss chard, or arugula as substitute for spinach
  • 1/4 cup silken tofu blended with cottage cheese for creamier texture

Instructions

  1. Prepare the Spinach and Aromatics: Wash and roughly chop fresh spinach. In a skillet over medium heat, heat a touch of olive oil (natural), then sauté finely chopped onions and minced garlic (natural flavoring) until translucent and fragrant. Add the spinach and cook until wilted, allowing excess moisture to evaporate. Remove from heat and let cool.
  2. Mix the Filling: In a large bowl, whisk together eggs, plant-based cottage cheese, plant-based cheese, vegetarian Worcestershire sauce, salt, pepper, and nutmeg (natural flavoring). Gently fold in the cooled sautéed spinach mixture, ensuring even distribution without overmixing.
  3. Bake to Perfection: Lightly grease a baking dish or pie plate with olive oil (natural). Pour the quiche batter into the dish and spread evenly. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes, or until the edges are golden and a knife inserted in the center comes out clean. Let cool for a few minutes before slicing and serving.

Notes

  • Drain spinach thoroughly to prevent excess moisture and a watery quiche.
  • Use room temperature eggs for smoother blending and even baking.
  • Fresh ingredients and quality plant-based cheeses improve flavor and texture.
  • Watch carefully in the last 10 minutes of baking to avoid drying the quiche.
  • Allow quiche to rest and cool before slicing for clean, neat pieces.
