Ingredients
Scale
For the Tuna Salad
- 1 can canned tuna packed in water or olive oil, drained
- 2 tablespoons natural mayonnaise
- 1 teaspoon natural Dijon mustard
- 1/4 cup celery, finely chopped
- 2 tablespoons red onion, minced
- 1 tablespoon fresh parsley, chopped
- Salt, to taste
- Freshly ground black pepper, to taste
Other Ingredients
- 4 slices whole grain bread
- 4 slices smoked turkey bacon
- 4 slices plant-based cheese
Instructions
- Prepare the Tuna Salad: Drain the canned tuna thoroughly to avoid a soggy sandwich. In a mixing bowl, combine the tuna with natural mayonnaise, natural Dijon mustard, finely chopped celery, minced red onion, chopped fresh parsley, salt, and freshly ground black pepper. Mix until well combined but still chunky enough to retain texture.
- Cook the Smoked Turkey Bacon: Heat a non-stick skillet over medium heat. Cook the smoked turkey bacon until crispy, approximately 3 to 4 minutes per side depending on thickness. Remove and place on a paper towel-lined plate to drain excess fat.
- Assemble the Sandwich: Lay slices of whole grain bread on a clean surface. Spread a generous layer of the prepared tuna salad on one slice. Place the crispy smoked turkey bacon strips on top, then add slices of plant-based cheese. Cover with the second slice of bread.
- Toast the Sandwich: Reheat the skillet over medium-low heat. Carefully place the sandwich in the skillet and cook for about 3 to 5 minutes per side. Press gently with a spatula to promote even browning and to melt the plant-based cheese. Once both sides are golden brown and cheese is melted, remove the sandwich and let it rest for one minute before slicing and serving.
Notes
- Drain tuna well to prevent watery texture.
- Toast on low heat to melt plant-based cheese evenly without burning the bread.
- Add an extra slice of plant-based cheese for extra gooeyness.
- Day-old bread toasts better and provides extra crunch.
- Chop celery and onion finely for a subtle crunch or more coarsely for extra bite.
