This comforting cheesy scalloped potatoes recipe is perfect for any occasion, offering irresistible flavors and a golden crust that delights every bite.

Ingredients

Scale

Potatoes and Protein

  • 4 cups thinly sliced Yukon Gold or Russet potatoes (about 4 medium potatoes)
  • 6 slices smoked turkey bacon, cooked crisp and chopped

Creamy Sauce

  • 3 tablespoons plant-based butter
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups plant-based milk
  • 2 cloves garlic, minced (natural)
  • 1 teaspoon onion powder (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/4 teaspoon nutmeg (natural)
  • 1 teaspoon natural gelling agent
  • 1 1/2 cups shredded plant-based cheese (plant-based)
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes and Bacon: Preheat the oven to 350°F (175°C). Thinly slice the potatoes about 1/8 inch thick for even cooking. Cook the smoked turkey bacon in a skillet until crispy, then chop into bite-sized pieces to layer between the potato slices.
  2. Make the Creamy Cheese Sauce: In a medium saucepan, melt the plant-based butter over medium heat. Whisk in the flour to form a roux and cook for 1-2 minutes, stirring constantly to remove the raw flour taste. Gradually pour in the plant-based milk while whisking vigorously to avoid lumps. Add the minced garlic, onion powder, vegetarian Worcestershire sauce (natural), nutmeg (natural), salt, pepper, and natural gelling agent. Stir continuously until the sauce thickens into a smooth, velvety consistency. Remove from heat and fold in the shredded plant-based cheese until fully melted and incorporated.
  3. Layer the Dish: Grease a baking dish with plant-based butter or oil. Spread a thin layer of the cheese sauce on the bottom. Arrange a layer of potato slices on top, then sprinkle some cooked turkey bacon and drizzle more cheese sauce over. Repeat layering potatoes, turkey bacon, and cheese sauce until all ingredients are used, finishing with a generous layer of shredded plant-based cheese on top.
  4. Bake to Perfection: Cover the baking dish with foil and bake in the preheated oven for 45 minutes or until potatoes are tender and sauce is bubbly. Remove foil and bake an additional 15 minutes to allow the top to brown and crisp to a golden crust. Let cool for 5-10 minutes before serving to allow the layers to set.

Notes

  • Use evenly thin potato slices to ensure uniform cooking and perfect tenderness.
  • Stir sauce constantly while cooking to avoid lumps and achieve a smooth texture.
  • Let the dish rest after baking to thicken the sauce and set layers.
  • Cover while baking to retain moisture and remove cover at the end for a crispy top.
  • Customize the cheese blend by mixing different plant-based cheeses (plant-based) for richer flavor and meltiness.
