Description

Cheesy Potato Bake is a warm, satisfying dish featuring creamy plant-based cheese, crispy smoked turkey bacon, and fresh herbs. This comforting recipe is easy to make with simple ingredients and layers rich flavors perfect for a family-friendly side or main course.

Ingredients

Scale

Potatoes

  • 2 pounds Yukon Gold or red potatoes, washed and thinly sliced

Cheese Sauce

  • 1 1/2 cups creamy (plant-based) cheese
  • 1 cup vegetable broth
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon natural gelling agent

Aromatics & Bacon

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 slices smoked turkey bacon, chopped (omit for vegetarian option)

Instructions

  1. Prepare the Potatoes: Wash and thinly slice the potatoes evenly using a mandoline slicer or a sharp knife to ensure uniform thickness for even baking.
  2. Sauté Aromatics and Bacon: Heat olive oil in a skillet over medium heat. Sauté the finely chopped onions and minced garlic until fragrant and translucent. Add chopped smoked turkey bacon pieces and cook until lightly crisp, releasing smoky flavors.
  3. Combine Cheese and Broth Mixture: In a bowl, whisk together creamy (plant-based) cheese, vegetable broth, vegetarian Worcestershire sauce (natural), fresh chopped thyme, rosemary, parsley, and natural gelling agent until smooth and creamy.
  4. Layer the Bake: In a baking dish, arrange a layer of potato slices, spread some of the onion and bacon mixture evenly over them, then pour a portion of the cheese sauce on top. Repeat layering, finishing with a thick layer of cheese sauce on top.
  5. Bake Until Golden and Bubbling: Cover the dish loosely with foil and bake at 375°F (190°C) for about 40 minutes. Remove the foil and bake for an additional 15 minutes until the top is golden brown and bubbly.

Notes

  • Use a mandoline for even potato slices to ensure uniform cooking.
  • Take your time layering to balance flavors and textures perfectly.
  • Select creamy (plant-based) cheeses that melt well for the best gooey finish.
  • Fresh herbs brighten and enhance the flavor noticeably.
  • Allow the dish to rest for 10 minutes after baking for cleaner slicing.
