Description

California Pasta Salad is a bright, fresh, and flavorful dish perfect for summer gatherings. It features smoked turkey bacon, crisp vegetables, plant-based cheddar cheese, and a zesty natural dressing made with apple cider vinegar. This colorful and balanced salad is quick to prepare, customizable, and ideal for picnics, potlucks, or family dinners.

Ingredients

Protein

  • Smoked turkey bacon: 6 slices

Pasta

  • Rotini pasta: 3 cups (uncooked)

Vegetables

  • Cherry tomatoes: 1 cup, halved
  • Red bell pepper: 1 medium, diced
  • Cucumber: 1 medium, diced
  • Black olives: 1/2 cup, sliced
  • Fresh parsley: 1/4 cup, finely chopped

Cheese

  • Cheddar cheese (plant-based): 1 cup, cubed

Zesty Dressing (natural)

  • Apple cider vinegar: 3 tablespoons
  • Dijon mustard: 1 tablespoon
  • Minced garlic: 1 clove
  • Olive oil: 1/4 cup
  • Maple syrup (natural sweetener): 1 teaspoon
  • Salt: 1/2 teaspoon, or to taste
  • Black pepper: 1/4 teaspoon, or to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente, about 8 to 10 minutes as per package instructions. Drain and rinse under cold water to cool completely. Set aside.
  2. Prepare the Smoky Turkey Bacon: Heat a skillet over medium heat and cook the smoked turkey bacon until crispy and golden brown. Remove and drain on paper towels, then chop into bite-sized pieces once cooled.
  3. Chop the Fresh Vegetables and Cheese: Dice the red bell pepper and cucumber into small uniform pieces. Halve the cherry tomatoes, slice the black olives, cube the plant-based cheddar cheese, and finely chop the fresh parsley.
  4. Make the Zesty Dressing (natural): In a small bowl, whisk together apple cider vinegar, Dijon mustard, minced garlic, olive oil, maple syrup (natural sweetener), salt, and pepper. Adjust seasoning until the dressing is bright and lively.
  5. Combine Everything: In a large mixing bowl, toss together the cooled pasta, chopped vegetables, turkey bacon, black olives, plant-based cheese, and parsley. Pour the zesty dressing over the salad and gently stir to coat evenly. Chill in the refrigerator for 30 minutes to allow flavors to meld.

Notes

  • Cook pasta al dente to prevent mushiness when chilled.
  • Chill the salad for at least 30 minutes to enhance flavors.
  • Use fresh, crisp vegetables for the best texture and taste.
  • Make the dressing in advance to deepen its flavor.
  • Stir gently but thoroughly to avoid damaging delicate ingredients like tomatoes.
