Instructions

  1. Activate the yeast: Warm the plant-based milk to around 100°F (38°C). Sprinkle the active dry yeast and a pinch of natural sweetener on top. Let it rest for 5-10 minutes until frothy and bubbly.
  2. Mix the wet ingredients: In a large bowl, combine the melted plant-based butter, the egg substitute (flax eggs or aquafaba), and the yeast mixture. Whisk until fully blended and smooth.
  3. Combine dry ingredients: In a separate bowl, sift together the flour, natural gelling agent, and salt to ensure even distribution.
  4. Form the dough: Gradually add the dry ingredients into the wet mixture, stirring until a sticky dough forms. Knead on a lightly floured surface for 8-10 minutes until smooth and elastic.
  5. First rise: Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm spot for 1 to 1.5 hours, until it doubles in size.
  6. Shape the rolls: Punch down the dough gently and divide into equal portions. Shape each into a smooth ball and arrange on a greased baking tray with space between them.
  7. Second rise: Cover the shaped rolls with a cloth and let rise for 30-45 minutes until puffed up.
