Ingredients

Scale

For the Chicken and Marinade

  • 500g chicken breasts or thighs, cut into chunks
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar (natural)
  • 2 cloves garlic (natural), minced
  • 1 tsp smoked paprika
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp lemon juice (natural)
  • 2 tbsp fresh herbs (parsley or cilantro), chopped

For the Skewers

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 cup cherry tomatoes
  • 1 small red onion, cut into chunks

For the Salad Base

  • 4 cups mixed greens
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved

For the Dressing

  • 2 tbsp olive oil
  • 1 tbsp lemon juice (natural)
  • 1 tbsp apple cider vinegar (natural)
  • 1/4 tsp natural gelling agent
  • Salt and pepper to taste

Optional Garnishes

  • Toasted seeds or nuts
  • Fresh chopped herbs (parsley or cilantro)

Instructions

  1. Prepare the Marinade and Chicken: In a bowl, combine olive oil, apple cider vinegar (natural), minced garlic (natural), smoked paprika, vegetarian Worcestershire sauce (natural), lemon juice (natural), and chopped fresh herbs. Add the chicken chunks and coat thoroughly with the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
  2. Assemble the Skewers: Thread the marinated chicken pieces onto skewers, alternating with bell pepper chunks, cherry tomatoes, and red onion pieces to create colorful and flavorful layers.
  3. Grill the Skewers: Preheat your grill or grill pan to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally until chicken is cooked through and has an appealing char.
  4. Prepare the Salad Base: While the skewers grill, toss mixed greens, cucumber slices, thinly sliced red onion, and halved cherry tomatoes in a large bowl. Lightly dress with a mixture of olive oil, lemon juice (natural), apple cider vinegar (natural), natural gelling agent, salt, and pepper.
  5. Serve and Enjoy: Arrange the grilled chicken skewers on top of the dressed salad base. Drizzle with extra dressing if desired, and garnish with toasted seeds or nuts and fresh chopped herbs. Serve immediately for the best taste and texture.

Notes

  • Marinate the chicken for at least 30 minutes for deeper flavor absorption.
  • Cut chicken and vegetables into uniform pieces to ensure even grilling.
  • Do not overcrowd the grill; leave space between skewers for proper charring.
  • Use fresh herbs like parsley or cilantro for a brighter aroma and flavor.
  • Prepare the dressing ahead of time to allow the flavors to meld beautifully.
