Instructions

  1. Prepare Your Ingredients: Dice the smoked turkey bacon and chop the garlic. Rinse the spinach and roughly chop if fresh. Pat chicken breasts dry, then season with salt, pepper, and Italian herbs.
  2. Cook the Turkey Bacon and Chicken: In a large skillet over medium heat, cook the turkey bacon until crispy and golden. Remove and set aside. Using the same skillet, brown the chicken breasts on both sides until golden but not fully cooked. Transfer chicken to a baking dish.
  3. Make the Creamy Tuscan Sauce: In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and spinach, cooking until spinach wilts. Pour in plant-based heavy cream, apple cider vinegar, and vegetarian Worcestershire sauce (natural). Stir in the natural gelling agent until the sauce thickens slightly. Fold in the plant-based cheese, allowing it to melt smoothly into the sauce.
  4. Assemble and Bake: Pour the creamy sauce evenly over the chicken breasts in the baking dish. Sprinkle cooked smoked turkey bacon on top. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, until chicken is cooked through and sauce is bubbling and golden.
