Instructions

  1. Prepare the Ube Puree: Start with cooked purple yam, then mash or blend it until smooth. This vibrant puree will be the heart of your bread rolls, giving them their distinct color and subtle sweetness.
  2. Activate the Yeast: In a bowl, mix warm plant-based milk with sugar and active dry yeast. Let it sit for 5–10 minutes until frothy to ensure the yeast is alive and ready to work its magic.
  3. Combine Dry and Wet Ingredients: In a large mixing bowl, whisk together all-purpose flour, salt, and natural gelling agent. Then add the yeast mixture, ube puree, egg substitute, vegetarian Worcestershire sauce (natural), and softened plant-based butter. Stir until a sticky dough begins to form.
  4. Knead the Dough: Transfer the dough onto a floured surface and knead for about 8–10 minutes. This step develops elasticity and gives the rolls their soft, airy texture. Continue until the dough is smooth and slightly tacky.
  5. First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and leave it to rise in a warm spot for about 1 to 1.5 hours or until it doubles in size.
