Description

Sourdough Peach Cobbler is a delicious dessert that combines a tangy sourdough crust with sweet, juicy peaches glazed with a natural gelling agent. This comforting, plant-based treat is perfect for family gatherings or cozy nights, offering a perfect balance of flavors and textures that highlight seasonal fruit and rustic baking.

Ingredients

Scale

For the Peach Filling

  • 4 to 5 ripe fresh peaches, peeled and sliced
  • 1/2 cup brown sugar (natural)
  • 1 tablespoon lemon juice (natural)
  • 1/2 teaspoon cinnamon (natural)
  • 1/4 teaspoon nutmeg (natural)
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon natural gelling agent

For the Sourdough Crust

  • 1 cup sourdough starter
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup plant-based butter (plant-based), cold and cubed

Instructions

  1. Prepare the Peach Filling: Peel and slice fresh peaches. In a large bowl, combine the peaches with brown sugar (natural), lemon juice (natural), cinnamon (natural), nutmeg (natural), vegetarian Worcestershire sauce (natural), and natural gelling agent. Stir gently to mix and let sit for 15 minutes to allow flavors to meld and juices to release.
  2. Make the Sourdough Crust: In a mixing bowl, combine sourdough starter, flour, and salt. Add cold cubed plant-based butter (plant-based) and work it into the flour mixture using fingers or a pastry cutter until it resembles coarse crumbs. Gradually bring the dough together until slightly sticky but manageable. Chill the dough in the refrigerator for 20 minutes.
  3. Assemble the Cobbler: Grease a baking dish and spread the peach filling evenly inside. Remove the chilled dough and either crumble it on top of the filling for crunchy pockets or roll it out and cover the peaches completely for a thicker crust according to preference.
  4. Bake to Perfection: Preheat the oven to 375°F (190°C). Place the assembled cobbler in the oven and bake for 40 to 45 minutes until the top is golden brown and crispy, and the peach filling is bubbling. Let cool slightly before serving to allow the filling to set.

Notes

  • Use ripe peaches for best sweetness and juiciness.
  • Keep the sourdough crust cold before baking to achieve a flakier texture.
  • Do not omit the natural gelling agent to keep the filling glossy and thick.
  • Crumbling extra dough on top adds delightful crunchy pockets.
  • Allow the cobbler to rest before serving so the filling firms up and slices cleanly.
