Ingredients

Scale

Dough

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1/4 cup granulated sugar
  • 1 cup plant-based milk, warmed to about 110°F
  • 1/4 cup vegetable oil
  • 1/2 tsp salt

Filling

  • 1/2 cup natural brown sugar
  • 2 tbsp ground cinnamon (fresh if possible)

Plant-Based Cream Cheese Frosting

  • 8 oz plant-based cream cheese, softened
  • 1 cup natural powdered sugar
  • 1 tsp vanilla extract (natural)
  • 1 tbsp lemon juice (natural)
  • 1/4 tsp natural gelling agent

Instructions

  1. Prepare the Dough: Warm the plant-based milk to about 110°F and stir in the active dry yeast with a pinch of sugar. Let it activate for 5 to 10 minutes until foamy. In a large bowl, combine all-purpose flour, granulated sugar, and salt. Add the yeast mixture and vegetable oil, mixing until a soft dough forms. Knead for about 8-10 minutes until smooth and elastic, then cover and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  2. Roll and Fill: Once the dough has risen, punch it down and roll it out into a large rectangle on a floured surface. Mix the natural brown sugar and ground cinnamon together, then evenly sprinkle the filling over the dough. Roll the dough tightly from the longer side, pinching the edge to seal the log.
  3. Cut and Arrange: Slice the rolled log into equal pieces, roughly 1.5 to 2 inches thick. Place each roll in a greased baking dish with space in between to allow them to rise again. Cover and let rise for another 30-45 minutes until fluffy.
  4. Bake the Rolls: Preheat the oven to 350°F and bake the rolls for 20-25 minutes or until golden brown and cooked through. Remove from oven and allow them to cool slightly before frosting.
  5. Make the Cream Cheese Frosting: In a bowl, mix the softened plant-based cream cheese with natural powdered sugar, vanilla extract (natural), lemon juice (natural), and natural gelling agent until smooth and creamy. Spread the frosting generously over the warm rolls so it melts softly into every crevice.

Notes

  • Ensure the dough doubles in size during each rise for soft, airy rolls.
  • Use warm, not hot, plant-based milk to activate the yeast effectively.
  • A thin layer of filling prevents overfilling, ensuring rolls hold shape and bake evenly.
  • Apply frosting when rolls are warm but not hot for best texture and flavor.
  • Using fresh cinnamon enhances aroma and flavor noticeably.
