Description

This Shrimp Scampi recipe combines bright lemon, garlic, and olive oil with tender shrimp for a quick and flavorful meal ready in under 20 minutes. Perfect for busy weeknights or impressing guests, it offers a fresh, zesty, and satisfying dish that can be served over pasta, rice, or vegetable noodles.

Ingredients

Scale

Shrimp and Aromatics

  • 12 oz fresh shrimp, peeled and deveined
  • 3 garlic cloves, minced
  • 1 lemon, zest and juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped

Seasonings and Sauces

  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1/4 teaspoon red pepper flakes (optional)
  • Sea salt, to taste
  • Black pepper, to taste

Serving Base

  • 8 oz pasta or zucchini noodles (zoodles) of your choice

Instructions

  1. Prepare the shrimp and aromatics: Rinse the shrimp under cold water and pat dry to ensure even searing. Mince the garlic cloves finely, zest and juice the lemon, and set all ingredients aside for easy access when cooking.
  2. Sauté the garlic: Heat the extra virgin olive oil in a large skillet over medium heat. Add the minced garlic and sauté gently for about 1 minute until fragrant, being careful not to brown it.
  3. Cook the shrimp: Increase the heat to medium-high and add the shrimp in a single layer. Cook for about 2 minutes on one side until they begin to turn pink, then flip and cook for another 1-2 minutes until fully opaque and cooked through.
  4. Add lemon, vegetarian Worcestershire sauce (natural), and seasoning: Reduce heat to medium. Stir in the lemon juice, lemon zest, and vegetarian Worcestershire sauce (natural). Season with sea salt, black pepper, and red pepper flakes if using. Toss the shrimp to coat evenly with the sauce.
  5. Finish with parsley and serve: Remove the skillet from heat and sprinkle with chopped fresh parsley. Give everything a gentle toss and serve immediately over your choice of pasta or vegetables.

Notes

  • Use room temperature shrimp for even cooking and better texture.
  • Do not overcrowd the pan; cook shrimp in batches if necessary to get a perfect sear.
  • Fresh garlic provides a more vibrant and aromatic flavor than pre-minced.
  • Lemon zest adds bright citrus oils enhancing the overall dish flavor.
  • Add parsley just before serving to preserve its fresh color and flavor.
