Mashed Potatoes (Plant-Based)

  • 2 pounds potatoes, peeled and chopped
  • 2 tbsp plant-based butter
  • 1/3 cup plant-based milk (such as oat or almond milk)

Instructions

  1. Prepare the Mashed Potatoes (Plant-Based): Peel and boil the potatoes until fork-tender. Drain and mash them thoroughly with plant-based butter and a splash of plant-based milk until smooth and creamy. Season with salt and pepper to your taste. Set aside while preparing the filling.
  2. Cook the Smoked Turkey Bacon and Vegetables: Heat olive oil in a large skillet over medium heat. Add the chopped smoked turkey bacon and cook until crisp. Remove the bacon from the skillet and set aside. In the same pan, sauté the diced onions, carrots, and minced garlic for about 5-7 minutes until softened and fragrant.
  3. Combine Filling Ingredients: Return the cooked turkey bacon to the skillet. Add the frozen peas, vegetarian Worcestershire sauce (natural), tomato paste (natural), apple cider vinegar, and vegetable broth. Stir in the natural gelling agent to bind the mixture smoothly.
