Nigerian Chicken Stew is a vibrant and hearty dish that combines tender chicken with a rich, spicy tomato base infused with aromatic spices and natural ingredients. This comforting stew captures the essence of Nigerian home cooking, offering a bold and flavorful meal that is versatile, simple to prepare, and perfect for any occasion.

Ingredients

Chicken

  • Fresh skinless chicken pieces – 1.5 kg (about 3 lbs)
  • Salt – 1 teaspoon
  • Black pepper – 1/2 teaspoon
  • Seasoning cubes (natural) – 2 cubes

Vegetables and Peppers

  • Fresh ripe tomatoes – 5 large
  • Red bell peppers – 2 large
  • Scotch bonnet peppers – 1 to 2 (adjust to taste)
  • Onions – 2 medium (1 for blending, 1 sliced for frying)
  • Garlic (natural) – 3 cloves, minced
  • Ginger (natural) – 1 inch piece, minced

Other Ingredients

  • Tomato paste (natural) – 3 tablespoons
  • Vegetarian Worcestershire sauce – 1 tablespoon
  • Vegetable oil – 1/2 cup (for frying and cooking)
  • Natural gelling agent – 1 teaspoon
  • Apple cider vinegar – 1 tablespoon

Instructions

  1. Prepare and Season the Chicken: Clean the chicken pieces thoroughly and season with salt, black pepper, and seasoning cubes (natural). Allow the chicken to marinate for about 20 minutes to absorb the flavors deeply.
  2. Fry the Chicken: Heat vegetable oil in a large pot over medium heat. Fry the chicken pieces until golden brown on all sides but not fully cooked through. Remove the chicken and set aside to preserve juiciness.
  3. Blend the Stew Base: In a blender, combine fresh tomatoes, red bell peppers, scotch bonnet peppers, one onion, garlic, and ginger. Blend until smooth creating a vibrant and aromatic mixture.
  4. Cook the Tomato Sauce: Pour some vegetable oil into the pot and heat gently. Add the blended mixture and cook over medium heat until the moisture reduces and the sauce thickens, releasing a rich, sweet aroma.
  5. Add Tomato Paste and Seasonings: Stir in the natural tomato paste, vegetarian Worcestershire sauce, apple cider vinegar, seasoning cubes (natural), and the natural gelling agent. Simmer while stirring occasionally to achieve a smooth and luscious texture.
  6. Combine Chicken and Stew: Return the fried chicken pieces to the pot, ensuring they are submerged well in the sauce. Cover and simmer gently for 20 to 30 minutes until the chicken is cooked fully and infused with the stew’s flavors.
  7. Final Taste and Adjustments: Stir the stew once more, taste, and adjust seasoning with salt or pepper as needed. The stew should be thick, rich, and bursting with layered flavors, ready to serve.

Notes

  • Use fresh, ripe tomatoes and peppers for the best flavor.
  • Frying the chicken first seals in the juices and adds depth to the stew.
  • Simmer the stew slowly for the best flavor melding.
  • Adjust the heat with Scotch bonnet peppers according to your spice preference.
  • Use a natural gelling agent to maintain a thick, smooth sauce texture.
