  • Plant-based smoked bacon, chopped, 4 strips
  • Apple cider vinegar (natural), 1 teaspoon
  • Natural gelling agent, 1/2 teaspoon
  • Seasonings: salt, pepper, oregano (to taste)

Instructions

  1. Prepare the Filling: Heat olive oil (natural) in a skillet over medium heat. Add sliced red onion, bell peppers, and minced garlic (natural). Sauté until vegetables are tender but still vibrant. Toss in fresh spinach and sun-dried tomatoes (natural); cook just until spinach wilts. Stir in apple cider vinegar (natural), salt, pepper, and oregano. Add chopped plant-based smoked bacon and warm through. Remove from heat and set aside.
  2. Assemble the Quesadillas: Lay a flour tortilla flat. Sprinkle a thin layer of plant-based cheese on one half. Add a generous amount of the veggie and bacon mixture on top. Sprinkle a little more plant-based cheese over the filling. Fold the tortilla over to cover the filling and gently press down to secure.
  3. Cook Until Crisp and Melted: Place assembled quesadilla in a clean skillet over medium heat. Cook for 3 to 4 minutes on each side, or until the tortilla is golden brown and crispy and the plant-based cheese melts. Press lightly with a spatula without flattening the contents.
