Instructions

  1. Prepare the Ingredients: Dice the onion, slice the carrots and celery, mince the garlic, and zest the lemon. Cut the chicken breast into bite-sized pieces to ensure even cooking and easy bites.
  2. Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, cooking for about 5-7 minutes until softened and naturally sweetened. Add the minced garlic during the last minute to avoid burning and to release its aroma.
  3. Cook the Chicken: Add the chicken pieces to the pot and stir to coat with the vegetable mixture. Sauté for 5 minutes until the chicken is white on the outside but still tender inside.
  4. Add Broth and Seasoning: Pour in the chicken broth, then stir in the vegetarian Worcestershire sauce (natural), salt, and pepper. Bring to a gentle boil and simmer for 15 minutes to let flavors meld and chicken cook thoroughly.
