  • 1/4 cup grape juice (natural)
  • 1 tablespoon natural gelling agent
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh oregano
  • Salt and pepper, to taste

For Assembling and Baking

  • Additional creamy plant-based cheese blend for topping (about 1/2 cup)
  • Olive oil, for drizzling

Instructions

  1. Prepare the Pasta: Boil the lasagna noodles according to package instructions if using regular noodles, or use no-boil noodles for a quicker method. After cooking, lay the noodles flat on a clean kitchen towel to cool and prevent sticking.
  2. Make the Tomato Sauce: Heat olive oil in a pan over medium heat. Sauté chopped onions and garlic until fragrant and translucent. Add crushed tomatoes (natural), grape juice (natural), fresh herbs, and the natural gelling agent. Simmer gently, stirring occasionally, until the sauce thickens to a luscious consistency. Season with salt and pepper to taste.
  3. Prepare the Filling: In a mixing bowl, combine creamy plant-based cheese blend with chopped fresh basil, parsley, oregano, and sautéed spinach or kale if using. Season with salt and pepper and mix well.
  4. Assemble the Roll Ups: Spread a spoonful of the cheese and greens filling evenly onto one end of each pasta sheet. Carefully roll the noodles up and place them seam-side down in a baking dish that has a thin layer of tomato sauce at the bottom.
  5. Bake to Perfection: Spoon the remaining tomato sauce over the roll ups and sprinkle with extra creamy plant-based cheese blend. Drizzle lightly with olive oil. Bake in a preheated oven at 375°F (190°C) for 25 to 30 minutes, or until bubbly and golden on top.
