Description

Gingerbread Truffles are rich and creamy festive treats that combine warm, classic gingerbread spices with smooth plant-based ingredients. These decadent, velvety truffles offer a cozy, sweet flavor perfect for sharing or gifting during any celebration.

Ingredients

Scale

Spices

  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg

Truffle Base

  • 8 oz plant-based cream cheese
  • 1/4 cup plant-based butter, softened
  • 3/4 cup powdered sugar
  • 2 tablespoons molasses (natural)
  • 1 teaspoon vanilla extract (natural)
  • 1/2 teaspoon natural gelling agent

Coating and Finishing

  • 6 oz dark chocolate (plant-based), melted
  • Optional cinnamon sugar mix for dusting
  • Optional finely crushed toasted nuts for garnish

Instructions

  1. Prepare the Spice Mixture: Combine ground ginger, cinnamon, cloves, and nutmeg in a small bowl to create a warm and aromatic spice blend that will evenly flavor your truffles.
  2. Blend the Creamy Base: In a large bowl, whisk together plant-based cream cheese, plant-based butter, powdered sugar, molasses (natural), and vanilla extract (natural) until the mixture becomes smooth and fluffy, forming a luscious creamy base.
  3. Incorporate Spices and Natural Gelling Agent: Gently fold the prepared spice mixture and natural gelling agent into the creamy base, ensuring even distribution while maintaining a tender texture for the truffles.
  4. Chill the Mixture: Cover the bowl and refrigerate the mixture for at least 2 hours or until firm enough to handle, allowing it to set properly for shaping.
  5. Shape and Coat the Truffles: Scoop out small portions of the chilled mixture and roll them into balls by hand. Dip each truffle ball into melted dark chocolate (plant-based) to coat completely. Place coated truffles on a tray and allow the chocolate to set at room temperature or refrigerate until firm.
  6. Add Final Touches: Before the chocolate coating fully hardens, optionally sprinkle the truffles with cinnamon sugar mix or finely crushed toasted nuts to add sparkle and texture.

Notes

  • Proper chilling is important to ensure the mixture is firm enough for easy shaping and smooth, uniform truffles.
  • Use a fork or dipping tool for even chocolate coating with a glossy finish.
  • Bring plant-based cream cheese and butter to room temperature before mixing to avoid lumps.
  • Adjust spices gradually and taste during mixing to achieve your preferred balance of gingerbread flavor.
  • Store truffles in an airtight container to keep freshness and texture for up to one week refrigerated.
