Ingredients
Scale
Salmon
- 4 fresh salmon fillets, skin-on
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon Italian seasoning (natural)
- 2 tablespoons olive oil
Creamy Sauce
- 3 garlic cloves, minced
- 1 tablespoon sun-dried tomato paste
- 1 teaspoon natural gelling agent
- 1 cup plant-based cream
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- 2 tablespoons grape juice
Vegetables
- 1/3 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
Garnish (optional)
- Fresh basil or parsley, chopped
Instructions
- Prepare the Salmon: Pat salmon fillets dry with paper towels to ensure a nice sear. Heat olive oil in a large skillet over medium heat. Season salmon with salt, pepper, and Italian seasoning (natural). Place salmon skin-side down and sear for 4-5 minutes until the skin is crispy. Flip fillets briefly to finish cooking. Remove salmon from skillet and set aside.
- Build the Creamy Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Stir in sun-dried tomato paste and sprinkle in the natural gelling agent. Slowly pour in the plant-based cream, stirring constantly to form a smooth, rich sauce. Add vegetarian Worcestershire sauce (natural) and grape juice to balance the flavors.
- Add Vegetables: Mix in chopped sun-dried tomatoes and fresh spinach. Cook until the spinach wilts and the sauce thickens slightly, coating all ingredients beautifully.
- Combine and Finish: Gently nestle the cooked salmon fillets back into the creamy sauce, spooning extra sauce over the top. Heat through for 2 minutes. Garnish with fresh basil or parsley if desired before serving.
Notes
- Use fresh spinach and garlic for the best flavor and texture.
- Avoid overcooking the salmon; it will finish cooking in the sauce.
- Adjust sauce thickness by adding more plant-based cream or a splash of water as needed.
- Use a non-stick skillet to achieve a perfect salmon crust and easier cleanup.
- Serve immediately on a warm plate to keep the sauce creamy and warm.
