Description

Creamy Chicken Stroganoff with Mushrooms combines tender chicken breasts with rich earthy mushrooms in a velvety plant-based cream sauce. This comforting and nutritious dish features smoked turkey bacon for a smoky crunch, vegetarian Worcestershire sauce, and fresh herbs, making it a family favorite suitable for weeknight dinners or special occasions.

Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts, sliced into bite-sized pieces
  • 4 slices smoked turkey bacon, chopped

Vegetables & Aromatics

  • 8 oz cremini or button mushrooms, cleaned and sliced
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped

Sauces & Seasonings

  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar (natural)
  • Salt and pepper, to taste

Dairy & Texture

  • 1 cup plant-based cream
  • 1 tsp natural gelling agent

Instructions

  1. Prepare the Ingredients: Slice the chicken into bite-sized pieces and clean mushrooms with a damp cloth. Dice the onion and mince the garlic to have all ingredients ready for cooking.
  2. Cook the Smoked Turkey Bacon: In a large skillet over medium heat, cook the smoked turkey bacon until crisp. Remove and set aside, leaving the rendered fat in the pan for flavor.
  3. Sauté Onion, Garlic, and Mushrooms: Using the smoked turkey bacon fat, sauté the diced onion until translucent. Add minced garlic and sliced mushrooms, cooking until the mushrooms are tender and have released their juices.
  4. Brown the Chicken: Push the vegetables to the side of the skillet and add chicken pieces. Brown evenly on all sides to lock in flavor.
  5. Create the Sauce: Stir in vegetarian Worcestershire sauce, apple cider vinegar, and natural gelling agent. Slowly pour in the plant-based cream while stirring constantly to thicken the sauce and combine flavors.
  6. Combine and Simmer: Return the cooked smoked turkey bacon to the skillet, stir to combine everything, then lower heat and simmer gently for 5-7 minutes until the chicken is fully cooked and flavors meld.
  7. Final Seasoning and Serve: Adjust salt and pepper to taste. Sprinkle fresh parsley on top and serve immediately, enjoying the rich and comforting dish.

Notes

  • Use room temperature chicken for even cooking and juicier texture.
  • Do not overcrowd the pan to ensure chicken browns well instead of steaming.
  • Clean mushrooms with a damp cloth; avoid rinsing under water to maintain texture.
  • Sauté onions and garlic slowly before mushrooms to develop deeper flavors.
  • Stir constantly when adding plant-based cream to prevent curdling and maintain sauce smoothness.
