Tortellini

  • 9 oz plant-based cheese tortellini
  • Salt, for boiling water

Cowboy Butter Sauce

  • 4 slices smoked turkey bacon, chopped
  • 2 tbsp plant-based butter
  • 3 cloves garlic, freshly minced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tsp apple cider vinegar (natural)
  • Salt, to taste
  • Pepper, to taste

Garnish

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Steak Bites: Pat the steak cubes dry and season generously with salt and pepper. Heat a skillet over medium-high heat with a touch of plant-based butter. Cook the steak bites in batches, searing each side until golden brown and cooked to your preferred doneness. Remove from skillet and set aside to rest.
  2. Cook the Tortellini: While the steak rests, bring a pot of salted water to boil. Cook the plant-based cheese tortellini until al dente according to package instructions. Drain well and set aside.
  3. Make the Cowboy Butter Sauce: In the same skillet, add chopped smoked turkey bacon and cook until crispy. Remove bacon pieces and leave the rendered fat in the pan. Reduce heat to medium, then melt plant-based butter in the bacon fat. Add freshly minced garlic and sauté until fragrant. Stir in vegetarian Worcestershire sauce, apple cider vinegar, salt, and pepper. Return crispy bacon to the skillet and mix well.
