Instructions

  1. Prepare the Base: Cook the smoked turkey bacon in a large pot over medium heat until crisp and golden. Remove the bacon and set aside. Leave the flavorful fat in the pot and add the diced onions and minced garlic. Sauté for 4-5 minutes until soft and fragrant.
  2. Sauté the Mushrooms: Add the sliced white mushrooms to the pot. Cook them down until they release their juices and develop a deep, caramelized color, unlocking rich mushroom flavor.
  3. Build the Soup: Pour in the vegetable broth, apple cider vinegar, and vegetarian Worcestershire sauce (natural). Stir in fresh thyme and black pepper. Bring the mixture to a gentle simmer to blend the flavors together.
  4. Blend for Creaminess: Allow the soup to cool slightly, then use an immersion blender or transfer the soup in batches to a blender. Blend together with the plant-based cottage cheese until mostly smooth but still retaining some texture. Stir in the dissolved natural gelling agent to gently thicken the soup.
