Description

Cinnamon Roll French Toast Casserole is a warm, inviting breakfast dish combining fluffy French toast texture with the sweet, spicy flavors of cinnamon rolls. This creamy, cozy casserole uses plant-based dairy and fragrant cinnamon spices, layered with smoked turkey bacon and smoked turkey slices for a perfectly balanced sweet and savory start to your day. Easy to prepare and beautifully caramelized on top, it’s ideal for family mornings or special brunches.

Ingredients

Scale

Custard Mixture

  • 4 large eggs
  • 2 cups plant-based dairy milk
  • 8 oz plant-based cream cheese, softened
  • 2 teaspoons cinnamon (natural)
  • 1 teaspoon natural vanilla extract (natural)
  • 1 teaspoon natural gelling agent
  • 2 tablespoons maple syrup (natural)

Base and Layers

  • 6 cups whole wheat or brioche bread, cut into cubes
  • 6 slices smoked turkey bacon
  • 4 oz smoked turkey slices

Topping

  • Additional cinnamon (natural), for sprinkling
  • Additional maple syrup (natural), for drizzling

Instructions

  1. Prepare the bread and filling: Cut your preferred bread into cubes, ideally brioche or whole wheat. Evenly layer the bread cubes in a greased baking dish. Tuck smoked turkey bacon and smoked turkey slices between the bread layers for a smoky, savory balance.
  2. Make the custard mixture: In a mixing bowl, whisk together eggs, plant-based dairy milk, softened plant-based cream cheese, cinnamon, natural vanilla extract, natural gelling agent, and maple syrup. Stir until smooth and creamy, ensuring the spices are fully incorporated.
  3. Pour custard over bread: Pour the custard mixture evenly over the layered bread, pressing down gently to help the bread absorb the custard. Cover the baking dish and refrigerate for at least one hour to allow the bread to soak up the flavors.
  4. Bake: Preheat the oven to 350°F (175°C). Remove the casserole from the refrigerator, sprinkle additional cinnamon and drizzle maple syrup on top. Bake uncovered for 45 to 50 minutes until the top is golden and caramelized and the custard is set.
  5. Serve warm: Allow the casserole to cool for a few minutes before slicing to maintain its shape. Serve with extra maple syrup or a dollop of plant-based yogurt for added creaminess.

Notes

  • Use slightly stale bread for better custard absorption and to avoid sogginess.
  • Chilling the casserole for at least one hour improves flavor melding and texture.
  • Adjust the amount of maple syrup to control sweetness to your preference.
  • Distribute smoked turkey bacon and smoked turkey slices evenly in layers for consistent flavor.
  • Check doneness by ensuring the top is golden and crisp and a skewer inserted comes out clean.
