Ingredients
Scale
Chicken
- 500g boneless chicken thighs or breasts
Marinade and Sauce
- 1/4 cup soy sauce (natural)
- 2 tbsp apple cider vinegar
- 2 tbsp brown sugar or maple syrup (natural)
- 1 tbsp vegetarian Worcestershire sauce (natural)
- 3 cloves fresh garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil
- 1/2 tsp natural gelling agent (dissolved in water)
Garnish
- 2 green onions, chopped
- 1 tbsp toasted sesame seeds (optional)
Instructions
- Prepare the Marinade: In a bowl, combine soy sauce (natural), apple cider vinegar, brown sugar or maple syrup (natural), vegetarian Worcestershire sauce (natural), minced garlic, grated fresh ginger, and sesame oil. Whisk thoroughly until the sugar dissolves and the mixture is smooth and glossy.
- Marinate the Chicken: Add the chicken pieces into the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 20 minutes, or up to 2 hours for deeper flavor. Even 10 minutes will enhance taste if short on time.
- Cook the Chicken: Heat a non-stick skillet over medium heat. Remove chicken from the marinade, reserving the marinade. Cook the chicken pieces skin-side down if using thighs, for 5 to 7 minutes until golden and cooked through. Flip and cook the other side until caramelized and fully cooked.
- Thicken the Sauce: Pour the reserved marinade into a small saucepan, add the dissolved natural gelling agent, and heat gently. Simmer while stirring until the sauce thickens to a luscious, glossy consistency suitable for glazing.
- Glaze and Serve: Brush the thickened sauce generously over the cooked chicken. Sprinkle with chopped green onions and toasted sesame seeds if using. Serve immediately for the freshest flavor.
Notes
- Marinate chicken up to 2 hours for enhanced flavor.
- Use skin-on chicken thighs to retain moisture and add crispy texture.
- Adjust sweetness by modifying the amount of brown sugar or maple syrup (natural).
- Cook over medium heat to avoid burning the sauce and chicken.
- Allow cooked chicken to rest a few minutes before serving to absorb juices.
