Chicken Teriyaki Noodles combine tender chicken, fresh vegetables, and a savory, homemade natural teriyaki sauce for a quick, nutritious, and flavorful weeknight dinner. This balanced and easily customizable dish features lean protein, crisp veggies, and noodles soaked in a rich umami sauce that warms and satisfies.

Ingredients

Scale

Protein

  • 1 lb boneless skinless chicken breast or thighs, sliced into bite-sized pieces

Noodles and Vegetables

  • 8 oz soba or rice noodles
  • 2 cups broccoli florets
  • 1 cup carrots, thinly sliced
  • 3 green onions, chopped

Aromatics

  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced

Teriyaki Sauce (natural)

  • 1/4 cup soy sauce (natural)
  • 2 tbsp brown sugar (natural) or maple syrup (natural)
  • 1 tbsp apple cider vinegar
  • 1 tbsp vegetarian Worcestershire sauce
  • 1 tsp sesame oil
  • 1/4 tsp natural gelling agent

Other

  • 1 tbsp cooking oil (such as vegetable or sesame oil) for sautéing
  • Optional garnishes: toasted sesame seeds, additional chopped green onions, chopped cilantro

Instructions

  1. Prepare the Ingredients: Slice the chicken into bite-sized pieces. Wash and chop broccoli into small florets. Thinly slice carrots and chop green onions. Mince garlic and ginger so they are ready to infuse the sauce with rich flavors.
  2. Cook the Noodles: Boil noodles according to package instructions until tender but still firm. Drain and set aside to be combined later with the sauce.
  3. Make the Teriyaki Sauce (natural): In a small bowl, whisk together soy sauce (natural), brown sugar (natural) or maple syrup (natural), apple cider vinegar, vegetarian Worcestershire sauce, sesame oil, minced garlic, minced ginger, and natural gelling agent until smooth and well combined.
  4. Cook the Chicken and Veggies: Heat a large skillet over medium-high heat and add cooking oil. Add the sliced chicken and sauté until golden brown and cooked through. Remove chicken from skillet. In the same skillet, add broccoli and carrots, stir-frying until crisp-tender.
  5. Combine Everything: Return the cooked chicken to the skillet with the vegetables. Pour the prepared teriyaki sauce over the mixture and toss everything to coat evenly. Let the sauce simmer gently until it thickens and becomes glossy.
  6. Toss with Noodles: Add the cooked noodles directly into the skillet and toss all ingredients together until well combined and heated through. Garnish with chopped green onions and optional toasted sesame seeds or cilantro before serving.

Notes

  • Do not overcook the noodles; keep them slightly firm to avoid mushiness when tossed in sauce.
  • Simmer the sauce gently to thicken to a shiny, flavorful coating without burning.
  • Slice chicken evenly for uniform cooking and pleasant texture.
  • Use fresh ginger and garlic to maximize flavor intensity.
  • Toast sesame seeds if using them as garnish to enhance their nutty aroma and crunch.
