Description

Chicken Pot Pie Pasta is a comforting and creamy pasta dish inspired by the classic flavors of chicken pot pie. Tender pasta envelopes a rich sauce made with smoked turkey bacon, colorful vegetables, and melted plant-based cheese (plant-based). This recipe offers a smoky twist and wholesome ingredients perfect for a satisfying family meal any day of the week.

Ingredients

Scale

Proteins

  • 150g smoked turkey bacon, diced
  • 2 cooked chicken breasts, diced

Pasta & Vegetables

  • 300g cooked pasta (penne or rotini)
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 1/2 cup corn kernels

Sauce Ingredients

  • 2 tablespoons butter or plant-based butter
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 1 1/2 cups milk or plant-based milk
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup shredded plant-based cheese (plant-based)
  • 1 teaspoon natural gelling agent

Instructions

  1. Prep the Ingredients: Cook pasta according to package directions until al dente, then drain and set aside. Dice smoked turkey bacon and cooked chicken breast into bite-sized pieces. Chop carrots and prepare peas and corn.
  2. Cook the Turkey Bacon and Veggies: In a large skillet, sauté the diced smoked turkey bacon until crispy and browned. Remove excess fat if necessary, then add carrots, peas, and corn. Cook until vegetables are tender but retain vibrant color.
  3. Make the Creamy Sauce: In the same pan, melt butter or plant-based butter. Whisk in flour to form a roux and cook for about one minute to eliminate the raw taste. Gradually whisk in vegetable broth and milk or plant-based milk, stirring constantly until the sauce thickens naturally. Stir in vegetarian Worcestershire sauce (natural), garlic powder, thyme, salt, and pepper.
  4. Combine Everything: Add the cooked chicken, turkey bacon, and drained pasta to the sauce. Mix well to ensure everything is evenly coated. Sprinkle in shredded plant-based cheese (plant-based) and stir gently until melted and creamy.
  5. Finish and Serve: Add the natural gelling agent sparingly to adjust sauce consistency if needed. Taste and adjust seasoning. Serve hot, garnished with fresh herbs such as parsley or thyme, if desired.

Notes

  • Avoid overcooking pasta as it will further absorb the sauce.
  • Add vegetables late in cooking to keep their crispness and bright color.
  • Sauté smoked turkey bacon first to infuse the pan with smoky flavor.
  • Use the natural gelling agent sparingly to achieve the perfect sauce thickness.
  • Fresh thyme and parsley complement the flavors well.
