Ingredients
Scale
Protein and Vegetables
- 2 boneless chicken breasts, cut into bite-sized pieces
- 3 cups fresh broccoli florets
Sauce Ingredients
- 1 cup shredded plant-based cheese
- 3 cloves garlic, minced
- 1 tablespoon vegetarian Worcestershire sauce (natural)
- 1 teaspoon apple cider vinegar
- 1 tablespoon olive oil
- 1 cup plant-based milk
- 1/2 teaspoon natural gelling agent
- Salt, to taste
- Black pepper, to taste
Pasta
- 8 ounces fettuccine or pasta of choice (gluten-free if desired)
Instructions
- Prepare the Chicken and Broccoli: Cut chicken breasts into bite-sized pieces and season lightly with salt and black pepper. Steam or blanch broccoli florets until just tender but still crisp to preserve their vibrant color and nutrients.
- Cook the Pasta: Boil pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water to adjust the sauce consistency if needed.
- Sauté Chicken and Garlic: Heat olive oil over medium heat in a large skillet. Add the chicken pieces and cook until golden and cooked through. Add minced garlic and sauté briefly until fragrant.
- Make the Alfredo Sauce: Lower the heat and stir in plant-based milk, shredded plant-based cheese, vegetarian Worcestershire sauce (natural), apple cider vinegar, and natural gelling agent. Stir continuously until the sauce thickens and coats the chicken evenly.
- Combine and Serve: Add the steamed broccoli and cooked pasta into the skillet with the sauce. Gently toss everything to combine flavors. If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached. Season to taste and serve hot.
Notes
- Use fresh broccoli and garlic for the best flavor and texture.
- Do not overcook broccoli to keep a crisp-tender texture and vibrant color.
- Add reserved pasta water gradually to control sauce thickness without thinning it too much.
- Cut chicken into similar-sized pieces for even cooking and juiciness.
- Choose a plant-based cheese that melts well for a smooth, creamy sauce.
