Cheesy Mississippi Mud Potatoes combine creamy mashed potatoes with smoky smoked turkey bacon and melty plant-based cheese for a comforting, indulgent side dish. This easy-to-make recipe is perfect for family meals or special gatherings and features rich, smooth textures and savory flavors baked to bubbly perfection.

Ingredients

Scale

Potatoes and Dairy Alternatives

  • 2 pounds Yukon Gold or Russet potatoes, peeled and cut into chunks
  • 1/4 cup plant-based butter
  • 1 cup plant-based cheese, shredded
  • 1/2 cup plant-based cheese, shredded (for topping)

Smoky Elements

  • 6 slices smoked turkey bacon, diced

Seasonings and Flavorings (natural)

  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1/2 teaspoon garlic powder (natural)
  • 1/2 teaspoon onion powder (natural)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Garnish

  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare the Potatoes: Peel and cut the potatoes into even chunks. Place them in a large pot of cold water with a pinch of salt and bring to a boil. Cook for 15-20 minutes or until tender when pierced with a fork. Drain thoroughly and return the potatoes to the pot to let excess moisture evaporate.
  2. Cook the Smoked Turkey Bacon: While the potatoes cook, dice the smoked turkey bacon. In a skillet over medium heat, cook until crispy and golden. Remove from heat and drain on paper towels to remove extra fat.
  3. Mash and Mix: Mash the potatoes using a masher or electric mixer on low speed. Gradually add plant-based butter, plant-based cheese, vegetarian Worcestershire sauce (natural), garlic powder (natural), onion powder (natural), salt, and pepper. Mix until creamy and combined. Fold in half of the crispy smoked turkey bacon.
  4. Bake to Perfection: Transfer the mashed potato mixture into a greased baking dish. Evenly sprinkle the remaining plant-based cheese and smoked turkey bacon on top. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until bubbly and golden brown.
  5. Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh chopped parsley. Serve warm and enjoy.

Notes

  • Choose Yukon Gold potatoes for the creamiest texture; Russets work well too.
  • Avoid overmixing the potatoes to keep them fluffy rather than gluey.
  • Use freshly shredded plant-based cheese for better melting and richer flavor.
  • Cook smoked turkey bacon until crispy but not burnt to avoid bitterness.
  • Adjust seasoning gradually by tasting after mixing ingredients.
