Instructions
- Prepare the Seafood: Thoroughly clean and cut the seafood into bite-sized pieces. Freshness is essential as the citrus juice will “cook” the seafood giving it a safe, firm texture without heat.
- Marinate with Citrus Juice: Place the seafood in a bowl and generously cover with fresh lime or lemon juice. Refrigerate for at least 20 minutes to allow the acidity to infuse the seafood with bright flavor.
- Add Fresh Vegetables and Herbs: Once the seafood becomes tender and opaque, drain some citrus juice and mix in diced tomatoes, cucumbers, red onion, cilantro, and finely chopped chili peppers.
- Season to Taste: Season with sea salt, fresh cracked pepper, and vegetarian Worcestershire sauce (natural). If a firmer marinade texture is preferred, gently whisk in a natural gelling agent until the desired consistency is reached.
- Chill and Serve: Allow the ceviche to chill for another 10 to 15 minutes to blend flavors, then serve with fresh garnishes such as thin slices of avocado (plant-based), tortilla chips, or toasted pumpkin seeds.
